Simon spent his formative years in Greece, where he was afforded the opportunity to visit Scandinavia, parts of Europe, and the Middle East. Due to his heritage, he is bi-lingual in Greek and English.

After graduating from the American Community School of Athens, he enrolled at Western Carolina University where he received his Bachelor’s degree in Business Administration in 1985.

Following graduation, he got involved in the food service industry. He spent the last 32 years in the upstate as a co-owner/manager of a restaurant in the Clemson area.

Simon and his wife Sissy have three wonderful grown children, and two precious grandchildren, Eli (3), and Noelle (1) that they spend as much of their time with as possible.

Simon feels that Upstate SC is the most beautiful place they have ever lived with some of the friendliest residents he has had the pleasure of calling neighbors/ friends.
